To have a complete team of Bo Jacksons, select any team then press LEFT, B and SELECT at the roster screen. Bo Jackson will now appear in every position.

Get Bo Jackson as Centre Fielder

Select Chicago as your team and the CPU as your opponent, then press A. Now press UP and then SELECT at the lineup screen. This will place Bo Jackson as your centre fielder.
